Spaghetti with Fresh Tomato Sauce

Good food does not have to be complicated or sophisticated and this simple and easy to make dish is a classic example of a flavourful pasta made of few ingredients in little time.

Serves 4 People


Salt and pepper
2 garlic cloves
5 tbsp olive oil + 2 tbsp for drizzling
2 cans chopped tomatoes
300 g cherry tomato
10 basil leaves + 4 for garnish
500 g spaghetti


Heat the oil on a high heat and brown the garlic.

Once the garlic is browned, remove it from the pan.

Add the cherry tomatoes to the pan and stir until soft.

Reduce to a medium heat and add the chopped tomatoes.

Cook for 10 minutes, turn off the heat and add the basil leaves.

Cook the pasta in plenty of salted water.

A couple of minutes before it is completely cooked, remove from the heat and either drain it with a colander, keeping some of the cooking water aside or remove with tongs.

Transfer to the pan of sauce and mix well over a heat until well combined.

If it is too dry, add a ladle of the water you saved.

Season with salt and pepper and serve garnished with shredded fresh basil and a few drops of olive oil drizzled on top.
